Very Berry Ice Cream
This deliciously refreshing berry ice cream recipe will cool you down on hot summer days.

Ingredients Needed:

  •    1 cup frozen strawberries
  •    1 cup frozen blueberries
  •    1 cup frozen raspberries
  •    2 bananas
  •    ½ to ½ cup soymilk
  •    ¼ cup frozen apple juice concentrate

Steps:

  1.    Four to six hours prior to meal time, peel and slice bananas.
  2.    Seal the banana slices in a plastic bag and put them in the freezer.
  3.    Just before serving, put frozen berries and bananas in a food processor.
  4.    Pulse fruit and add soymilk to desired creamy consistency.
  5.    Add apple juice concentrate and blend.

If you don’t eat the full serving you can freeze the leftovers and save them for another day!

Ingredients Needed:

  •    12 ounces extra firm silken tofu
  •    4 ounces Wax Orchards Classic Fudge
  •    1 tablespoon vanilla extract
  •    1 tablespoon Splenda

Steps:
  1.    Puree tofu until very smooth.
  2.    Add fudge, vanilla and Splenda and puree until thoroughly combined.
  3.    Look for a fluffy consistency.
  4.    Put into pipping bag and pipe into serving classes.
  5.    Optional: Garnish with a raspberry

Merry Berry Parfait

This signature healthy dessert dish has won the prestigious Platinum Carrot Award and is sure to delight your taste buds.

Ingredients Needed:

  •    1 cup fresh raspberry cooked with 2 tablespoons Splenda
  •    1 cup fresh blueberries cooked with 2 tablespoons Splenda
  •    1 cup diced mangoes cooked with 1 tablespoon Splenda
  •    3 cups fat free sour cream
  •    1 tablespoon vanilla extract
  •    ½ cup Splenda

Steps:

  1.    Whip sour cream, Splenda and vanilla extract together using a wire whip until smooth.
  2.    In a martini or parfait glass put a layer of raspberry mixture.
  3.    Next add a layer of sour cream mixture.
  4.    Top off the class with the blueberry and mango mixture.
  5.    Chill.
  6.    Optional: Garnish with a sprig of fresh mint.
